- Shape the bars: With clean and wet hands, form the coconut mixture into 12 log-shaped bars. Place each log on a parchment paper-lined cookie sheet and freeze for about 20 minutes to firm them up.
- Melt most of the chocolate: In a microwave-safe bowl, melt approximately 10 ounces of the dark chocolate. Microwave on high for 30 seconds, then continue in 15-second intervals, stirring well between each until fully melted and smooth.
- Incorporate remaining chocolate: Add the remaining 5 ounces of chocolate to the melted chocolate and stir until the entire amount is melted and evenly combined.
