Description

Alice Springs Chicken is a flavorful and hearty dish featuring juicy chicken breasts marinated in a tangy honey mustard sauce, topped with sautéed mushrooms, crispy bacon, and melted Colby-Jack cheese. Baked to perfection, this meal offers a delightful combination of savory and sweet flavors inspired by popular restaurant fare, perfect for a satisfying family dinner.

Ingredients

Scale

Chicken and Seasoning

  • 4 skinless, boneless chicken breasts (6 ounces each)
  • 1 teaspoon seasoning salt (such as Lawry’s)
  • 1/4 teaspoon garlic powder

Sauce

  • 1/2 cup Dijon mustard
  • 1/3 cup honey
  • 1/4 cup mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon dried onion flakes

Toppings and Sides

  • 6 slices bacon, cut in half
  • 2 cups sliced fresh mushrooms
  • 2 cups freshly shredded Colby-Jack cheese
  • 2 tablespoons chopped fresh parsley
  • Baked potato, for serving (optional)
  • Roasted broccoli, for serving (optional)

Instructions

  1. Prepare chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. Season both sides evenly with seasoning salt and garlic powder.
  2. Make sauce: In a mixing bowl, combine Dijon mustard, honey, mayonnaise, Worcestershire sauce, and dried onion flakes. Stir well until all ingredients are thoroughly mixed. Set aside half of this sauce for later use.
  3. Marinate chicken: Place the chicken breasts in a resealable Ziploc bag along with the remaining half of the sauce. Toss the chicken inside the bag to coat it evenly with the sauce. Refrigerate and marinate for at least 30 minutes, up to 8 hours for deeper flavor.
  4. Cook bacon: Preheat the oven to 350°F (175°C). In a skillet over medium heat, cook the bacon pieces until they become crisp. Remove and drain them on paper towels to remove excess grease.
  5. Sauté mushrooms: Add 1 tablespoon of the reserved bacon drippings to the skillet. Sauté the sliced mushrooms until they soften and release their juices, about 5 minutes. Remove from heat and set aside.
  6. Cook chicken: Add another tablespoon of the bacon drippings to the skillet. Place the marinated chicken breasts in the skillet and cook for approximately 5 minutes on each side until browned and partially cooked through.
  7. Assemble and bake: Transfer the chicken to a baking dish. Spoon some of the reserved sauce over each chicken breast. Top each piece with sautéed mushrooms, crispy bacon pieces, and freshly shredded Colby-Jack cheese. Bake in the preheated oven for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.
  8. Serve: Remove the chicken from the oven and let it rest for a few minutes to redistribute juices. Garnish with chopped fresh parsley. Serve hot with optional sides such as baked potato and roasted broccoli for a complete meal.

Notes

  • For best results, marinate the chicken for at least an hour or overnight to deepen the flavors.
  • Use a meat thermometer to ensure the chicken is safely cooked to 165°F (74°C).
  • Bacon drippings add great flavor, so reserve them carefully for sautéing mushrooms and chicken.
  • Feel free to substitute Colby-Jack cheese with Monterey Jack or Cheddar for a different cheese profile.
  • This recipe pairs wonderfully with baked potatoes and roasted vegetables for a balanced dinner.
