Apple Filling
- 2 cups peeled and diced apples (such as Granny Smith)
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Egg Rolls & Frying
- 10 egg roll wrappers
- Vegetable oil for frying
- Powdered sugar or cinnamon sugar for dusting (optional)
Instructions
- Prepare the Apple Filling: In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Stir and cook for 5–7 minutes, until the apples soften slightly.
- Thicken the Filling: Stir in the cornstarch-water mixture and continue cooking for another 1–2 minutes until the filling thickens. Remove from heat and let it cool completely.
- Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the cooled apple filling onto the center. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edge with a dab of water. Repeat the process with remaining wrappers and filling.
- Heat the Oil: In a deep pan, heat about 2 inches of vegetable oil to 350°F (175°C) for frying.
- Fry the Egg Rolls: Fry the egg rolls in batches for 2–3 minutes on each side or until they are golden brown and crispy. Remove them from oil and drain on paper towels.
- Serve: Dust with powdered sugar or cinnamon sugar if desired. Serve warm for the best taste and texture.

- You can use pre-made apple pie filling as a shortcut to save time.
- For a healthier alternative, bake the egg rolls at 400°F (200°C) for 15–18 minutes, flipping halfway through.
