  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Egg Rolls & Frying

  • 10 egg roll wrappers
  • Vegetable oil for frying
  • Powdered sugar or cinnamon sugar for dusting (optional)


Instructions

  1. Prepare the Apple Filling: In a medium saucepan over medium heat, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Stir and cook for 5–7 minutes, until the apples soften slightly.
  2. Thicken the Filling: Stir in the cornstarch-water mixture and continue cooking for another 1–2 minutes until the filling thickens. Remove from heat and let it cool completely.
  3. Assemble the Egg Rolls: Place an egg roll wrapper on a clean surface with a corner pointing toward you. Spoon about 2 tablespoons of the cooled apple filling onto the center. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edge with a dab of water. Repeat the process with remaining wrappers and filling.
  4. Heat the Oil: In a deep pan, heat about 2 inches of vegetable oil to 350°F (175°C) for frying.
