Ingredients
Scale
Dressing
- ½ cup mayonnaise (full fat or light)
- 2 tablespoons rice vinegar
- 2 tablespoons sweet chili sauce
- 1 tablespoon honey (or agave syrup)
- 1 tablespoon low sodium soy sauce
- 2 teaspoons minced garlic
- 1 teaspoon freshly grated ginger
- 1 teaspoon sesame oil
Salad
- 14-16 ounce bag of coleslaw mix
- 4 green onions (green parts thinly sliced)
- 1 cup almonds (coarsely chopped and toasted)
Garnish
- Chow mein noodles
- Sesame seeds
- Sliced green onions
- Additional toasted almonds
Instructions
- Prepare the Dressing: In a large bowl, whisk together the mayonnaise, rice vinegar, sweet chili sauce, honey, soy sauce, minced garlic, grated ginger, and sesame oil until fully combined and smooth.
- Toast the Almonds: Heat a skillet over medium heat, add the coarsely chopped almonds, and toast them while stirring frequently until they turn golden brown. Remove from heat and transfer the almonds to a plate to cool and prevent further cooking.
- Combine the Salad: Gradually add the coleslaw mix, sliced green onions, and toasted almonds to the dressing in thirds, stirring thoroughly after each addition to evenly coat the vegetables with the dressing.
- Chill the Salad: Cover the bowl tightly with plastic wrap or a lid and refrigerate the salad for at least one hour to allow the flavors to meld and the salad to chill before serving.
- Serve and Garnish: When ready to serve, sprinkle chow mein noodles, sesame seeds, additional toasted almonds, and sliced green onions over the top for extra crunch and visual appeal.
