Description

This Asparagus Tart combines flaky puff pastry with creamy ricotta cheese and fresh, tender asparagus spears. Perfect for a light lunch or an elegant appetizer, this recipe offers a delightful balance of creamy, savory, and citrus flavors with a crisp, golden crust.

Ingredients

Scale

Pastry

  • 1 sheet of puff pastry

Vegetables

  • 1 bunch of asparagus

Dairy

  • 8 ounces ricotta cheese

Seasoning and Oil

  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 1/2 teaspoon ground black pepper, divided
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it’s ready for baking the tart to a golden perfection.
  2. Prepare Asparagus: Snap or chop off the woody ends of the asparagus to keep only the tender parts. Toss the asparagus spears with half of the olive oil, salt, and pepper until evenly coated.
  3. Prepare Puff Pastry: Place the puff pastry sheet flat on a rimmed baking sheet lined with parchment paper. Using a knife, score a 1/2 inch border around the edges without cutting all the way through, then prick the inner section of the pastry with a fork multiple times to prevent excessive puffing.
  4. Assemble Tart: Spread the ricotta cheese evenly across the center of the puff pastry, staying within the scored border. Arrange the asparagus spears in a single layer on top of the ricotta.
  5. Bake: Place the baking sheet in the preheated oven and bake for 20 to 22 minutes until the puff pastry is puffed and golden brown.
  6. Finish and Serve: Once baked, let the tart cool for a few minutes. Drizzle the remaining olive oil over the top, sprinkle with the remaining salt and pepper, and finish with the freshly squeezed lemon juice for a bright, fresh flavor.

Notes

  • For a more flavorful ricotta layer, consider mixing in some grated parmesan or fresh herbs like thyme or basil before spreading it on the pastry.
  • Trim the asparagus uniformly to ensure even cooking and a neat presentation.
  • If puff pastry is frozen, allow it to thaw according to package instructions before using.
  • Serve warm or at room temperature with a side salad for a complete meal.
