  • 1 cup Panko breadcrumbs
  • 1 small onion (or 1/2 large), grated
  • 1 garlic clove, finely minced
  • 400 g / 14 oz cooked fresh salmon OR canned red or pink salmon, drained
  • 2 shallots / scallions / green onions, finely sliced
  • 1/3 cup fresh dill, roughly chopped (or 1 tsp dried herbs of choice)
  • 2 eggs
  • 1/2 cup Parmesan, grated or shredded
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp vegetable oil
  • Oil spray


Instructions

  1. Preheat oven: Preheat your oven to 220°C / 430°F (200°C fan forced) to prepare for baking the patties.
  2. Soak breadcrumbs: Place the panko breadcrumbs in a bowl. Grate the onion over the breadcrumbs, including all the juices, mixing well to moisten the breadcrumbs thoroughly.
  3. Mix base ingredients: Add the garlic, shallots, dill, eggs, Parmesan, salt, and pepper to the breadcrumb mixture. Stir everything together until well combined.
  4. Add salmon: Gently fold in the cooked or canned salmon, taking care to leave flakes intact rather than breaking it into tiny pieces.
  5. Form patties: Using a level 1/4 cup scoop, form round patties approximately 1.5 cm (2/3 inch) thick. Set the patties aside.
  6. Prepare the baking tray: Drizzle the vegetable oil over a baking tray and place it in the oven for 2 minutes until hot. Tilt the tray to spread the oil evenly.
  7. Place patties on tray: Arrange the patties on the hot oiled tray without pressing them down to avoid sticking. Lightly spray the top of the patties with oil spray.
  8. Bake patties: Bake the patties for 15 minutes. Then flip them over, spray the top again with oil spray, and bake for an additional 5 minutes until golden and cooked through.
  9. Serve: Serve the salmon patties hot with sour cream or yogurt for dipping, garnished with extra fresh dill if desired.
