For the Pie:
- 1 pre-baked 9-inch pie crust
- 3 large ripe bananas, sliced
- 3 cups whole milk
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 1/2 teaspoons pure vanilla extract
For the Topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract (for whipped cream)
- Optional: banana slices and crushed vanilla wafers for garnish
Instructions
- In a medium saucepan, whisk together milk, sugar, cornstarch, and salt over medium heat until smooth.
- Whisk egg yolks in a separate bowl. Slowly add some hot milk mixture to yolks to temper.
- Remove from heat and stir in butter and vanilla extract until smooth. Let custard cool slightly.
- Arrange banana slices in pie crust. Pour custard over bananas.
- Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Spread or pipe whipped cream over chilled pie. Garnish with banana slices and crushed vanilla wafers if desired.
Cook, stirring constantly, until thickened (5–7 mins).
Pour yolk mixture back into saucepan, cook over low heat until thick (3 mins).
Cover with plastic wrap, chill for at least 4 hours.
