Beef Marinade
- 1 pound flank steak or skirt steak
- 1 tablespoon low sodium soy sauce
- 1 tablespoon rice wine vinegar
Sauce
- 6 tablespoons low sodium soy sauce
- 2 tablespoons rice wine vinegar
- 6 tablespoons hoisin sauce
- 1 tablespoon brown sugar
- 2 teaspoons sesame oil
- 3/4 cup low sodium beef broth
- 2 tablespoons cornstarch
- 1 tablespoon minced ginger
- 4 cloves garlic, minced (used separately in cooking)
- Optional: 1/2-1 teaspoon Sriracha
Other Ingredients
- 3 packets ramen noodles (discard seasoning packets)
- 3 cups broccoli florets
- 2 tablespoons oil (divided)
- Sesame seeds, for garnish
- Chives, for garnish
Instructions
- Marinate the Beef: In a large Ziploc bag or bowl with a lid, combine the flank or skirt steak with 1 tablespoon low sodium soy sauce and 1 tablespoon rice wine vinegar. Seal and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
- Prepare the Sauce: In a medium bowl, whisk together 6 tablespoons soy sauce, 2 tablespoons rice wine vinegar, 6 tablespoons hoisin sauce, 1 tablespoon brown sugar, 2 teaspoons sesame oil, minced ginger, minced garlic (reserve some for later), beef broth, cornstarch, and optional Sriracha until well combined. Set aside.
- Cook the Ramen Noodles: Prepare the ramen noodles according to the package instructions, omitting the seasoning packets. Drain and set aside.
- Sauté the Broccoli: Heat 1 tablespoon oil in a large pan over medium heat. Add broccoli florets and sauté until tender-crisp, about 3-4 minutes. Remove broccoli from the pan and set aside.
- Cook the Beef: Add the remaining 1 tablespoon oil to the pan and increase heat to medium-high. Add the marinated beef and sear until desired doneness, about 2-3 minutes per side for medium rare. Remove from heat and thinly slice the beef, then return the slices to the pan.
- Combine Ingredients and Simmer: Add the sautéed broccoli back into the pan with the beef. Pour in the prepared sauce and add the reserved minced garlic. Stir everything together and simmer for 1-2 minutes until the sauce thickens and coats the ingredients.
- Toss in Noodles and Serve: Add the cooked ramen noodles to the pan and toss to fully coat with the sauce and ingredients. Garnish with sesame seeds and chopped chives. Serve immediately.

- For best flavor, marinate the beef overnight if possible.
- You can substitute broccoli with other vegetables like snap peas or bell peppers if preferred.
- Adjust the amount of Sriracha to suit your preferred spice level or omit it entirely.
- If you prefer a thicker sauce, increase the cornstarch by 1 teaspoon.
