Description

Birds Nest Cookies are a delightful no-bake treat combining creamy peanut butter, white chocolate, and crunchy chow mein noodles, topped with colorful Cadbury Mini Eggs. Perfect for Easter or anytime you crave a sweet, crunchy snack!

Ingredients

Scale

Ingredients

  • 1 11 oz bag white chocolate chips
  • 2 Tbsp powdered sugar
  • 3/4 cup creamy peanut butter
  • 1 8 oz can chow mein noodles
  • Approximately 36 Cadbury Mini Eggs (about 3 eggs per cookie for 12 cookies)

Instructions

  1. Melt the Chocolate: In a large microwave-safe bowl, microwave the white chocolate chips for about 1 minute, stirring every 15 seconds to prevent burning. Continue heating and stirring until fully melted and smooth.
  2. Mix in Sugar and Peanut Butter: Add the powdered sugar and creamy peanut butter to the melted chocolate and stir until the mixture is smooth and fully combined.
  3. Incorporate Chow Mein Noodles: Gently fold the chow mein noodles into the chocolate mixture using a silicone spoon, ensuring the noodles are fully coated but remain intact.
  4. Prepare Muffin Tin: Lightly spray a standard-size muffin tin with nonstick spray and wipe with a paper towel to avoid excessive oil.
  5. Form the Nests: Using a rounded tablespoon, scoop the mixture into each muffin cup. Press down in the middle of each to create a small well or ‘nest’.
  6. Add Mini Eggs: Place 3 Cadbury Mini Eggs into the center of each nest.
  7. Chill: Refrigerate the muffin tin for 20 minutes or until the cookies are firm and set.
  8. Serve: Carefully remove the cookies from the tin using a fork if needed, and enjoy!

Notes

  • Ensure the chocolate chips are melted gently to prevent burning; stirring every 15 seconds is key.
  • Use creamy peanut butter for the best texture and mixing ability.
  • If the nests are difficult to remove, gently use a fork or knife to loosen the edges.
  • Store the cookies in the refrigerator to keep them firm.
  • Substitute Cadbury Mini Eggs with any small colorful candy for variation.
