- Approximately 36 Cadbury Mini Eggs (about 3 eggs per cookie for 12 cookies)

- Melt the Chocolate: In a large microwave-safe bowl, microwave the white chocolate chips for about 1 minute, stirring every 15 seconds to prevent burning. Continue heating and stirring until fully melted and smooth.
- Mix in Sugar and Peanut Butter: Add the powdered sugar and creamy peanut butter to the melted chocolate and stir until the mixture is smooth and fully combined.
- Incorporate Chow Mein Noodles: Gently fold the chow mein noodles into the chocolate mixture using a silicone spoon, ensuring the noodles are fully coated but remain intact.
- Prepare Muffin Tin: Lightly spray a standard-size muffin tin with nonstick spray and wipe with a paper towel to avoid excessive oil.
- Form the Nests: Using a rounded tablespoon, scoop the mixture into each muffin cup. Press down in the middle of each to create a small well or ‘nest’.
- Add Mini Eggs: Place 3 Cadbury Mini Eggs into the center of each nest.
- Chill: Refrigerate the muffin tin for 20 minutes or until the cookies are firm and set.
- Serve: Carefully remove the cookies from the tin using a fork if needed, and enjoy!
