Scale
Base
- Tortilla Chips (pre-packaged or homemade, warmed if desired)
Cheese Sauce
- 16 ounces Velveeta cheese product
- 1 can Ro-Tel tomatoes, undrained (10 oz.)
Toppings
- 2 cans black beans, drained and rinsed (15 oz. each)
- Sour cream, for garnishing
- Green onions, for garnishing
- Salsa, for garnishing
Instructions
- Arrange Tortilla Chips: Place the tortilla chips evenly on a large plate or serving platter, creating a base layer for the nachos.
- Prepare Cheese Sauce: In a saucepan over low heat, combine the Velveeta cheese and undrained Ro-Tel tomatoes. Stir continuously until the cheese has completely melted and the mixture is smooth and well incorporated. Alternatively, you can microwave the mixture covered in a casserole dish on full power for 3 minutes, stir, then microwave for another 2-3 minutes until melted.
- Layer Cheese Sauce: Pour the warm cheese sauce evenly over the arranged tortilla chips, ensuring good coverage for cheesy goodness in every bite.
- Heat Black Beans: Place the drained and rinsed black beans in a microwave-safe container. Cover and microwave for 1½ to 2 minutes or until heated through thoroughly.
- Add Black Beans: Spoon the heated black beans evenly atop the cheese-covered tortilla chips, creating a hearty layer of protein and texture.
- Garnish and Serve: Finish the nachos with dollops of sour cream, chopped green onions, and your choice of salsa to enhance freshness and flavor. Serve immediately.
Notes
- You can warm the tortilla chips briefly in the oven or microwave to enhance their crispness before assembling.
- The Velveeta and Ro-Tel cheese sauce can be made ahead and reheated gently to save time.
- For a spicier version, add jalapeño slices or hot sauce as a topping.
- Black beans can be substituted with pinto beans or refried beans if preferred.
- Customize garnishes with avocado slices, olives, or shredded lettuce for added texture and flavor.
