- Preheat the oven: Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking dish by greasing it with coconut oil or lining it with parchment paper to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until the mixture is well combined and evenly distributed.
- Combine wet ingredients: In a separate bowl, mix the melted coconut oil with the pure vanilla extract until fully blended.
- Combine wet and dry mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined. It’s okay if there are some lumps remaining; avoid over-mixing to keep the bars tender.
- Add blackberries and pistachios: Carefully fold in the fresh blackberries and chopped pistachios, taking care not to crush the berries to keep their shape and texture intact.
- Bake the bars: Spread the batter evenly into the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes until the top is golden brown and a toothpick inserted comes out clean.
- Cool and serve: Allow the bars to cool slightly in the baking dish before cutting them into approximately 16 squares. Serve warm or at room temperature.
