Description

These Blackberry Pistachio Dream Bars are a delightful blend of sweet blackberries and crunchy pistachios baked into a tender, golden crust. Perfect as a snack or dessert, they combine natural fruit flavors with the rich nuttiness of pistachios and a subtle hint of vanilla, all lightly sweetened and baked to perfection.

Ingredients

Scale

Fruit and Nuts

  • 1 cup fresh blackberries
  • 1 cup shelled unsalted pistachios, chopped

Dry Ingredients

  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 tsp pure vanilla extract
  • 1/3 cup coconut oil, melted

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking dish by greasing it with coconut oil or lining it with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until the mixture is well combined and evenly distributed.
  3. Combine wet ingredients: In a separate bowl, mix the melted coconut oil with the pure vanilla extract until fully blended.
  4. Combine wet and dry mixtures: Pour the wet mixture into the dry ingredients and gently stir until just combined. It’s okay if there are some lumps remaining; avoid over-mixing to keep the bars tender.
  5. Add blackberries and pistachios: Carefully fold in the fresh blackberries and chopped pistachios, taking care not to crush the berries to keep their shape and texture intact.
  6. Bake the bars: Spread the batter evenly into the prepared baking dish. Bake in the preheated oven for 25 to 30 minutes until the top is golden brown and a toothpick inserted comes out clean.
  7. Cool and serve: Allow the bars to cool slightly in the baking dish before cutting them into approximately 16 squares. Serve warm or at room temperature.

Notes

  • Use fresh blackberries for the best flavor and texture.
  • Ensure the coconut oil is melted but not hot to avoid cooking the batter prematurely.
  • Do not overmix the batter, as this can result in tough bars.
  • Line the baking dish with parchment paper for easier removal and cleaner cuts.
  • Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for longer freshness.
