Description

These delicious Blueberry Hand Pies are a delightful treat with a flaky crust and a sweet blueberry filling. Perfect for dessert or a snack on the go!


Ingredients

Filling:

  • 1 ½ cups fresh or frozen blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • ½ teaspoon vanilla extract

Crust:

  • 1 package (14 oz) refrigerated pie crusts (2 crusts)
  • 1 large egg
  • 1 tablespoon milk
  • coarse sugar for sprinkling (optional)


Instructions

  1. Preheat and Prepare: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Make Filling: In a saucepan, cook blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla until thick. Cool.
  3. Assembly: Cut out circles from pie crusts. Spoon filling onto half the circles, top with remaining circles, seal edges, and brush with egg wash.
  4. Bake: Bake for 20–25 minutes until golden brown. Serve and enjoy!

Notes

  • You can use homemade dough instead of refrigerated pie crusts.
  • These hand pies are delicious when served warm with a scoop of vanilla ice cream.
