These delicious Blueberry Hand Pies are a delightful treat with a flaky crust and a sweet blueberry filling. Perfect for dessert or a snack on the go!

Filling:
- 1 ½ cups fresh or frozen blueberries
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
- ½ teaspoon vanilla extract
Crust:
- 1 package (14 oz) refrigerated pie crusts (2 crusts)
- 1 large egg
- 1 tablespoon milk
- coarse sugar for sprinkling (optional)
Instructions
- Preheat and Prepare: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Make Filling: In a saucepan, cook blueberries, sugar, cornstarch, lemon juice, lemon zest, and vanilla until thick. Cool.
- Assembly: Cut out circles from pie crusts. Spoon filling onto half the circles, top with remaining circles, seal edges, and brush with egg wash.
- Bake: Bake for 20–25 minutes until golden brown. Serve and enjoy!
Notes
- You can use homemade dough instead of refrigerated pie crusts.
- These hand pies are delicious when served warm with a scoop of vanilla ice cream.
