Description

This Bruschetta Dip is a delightful twist on the classic Italian appetizer, combining fresh, marinated tomatoes with a creamy blend of cheeses for a rich, flavorful dip. Perfect for parties or casual snacking, it pairs wonderfully with toasted baguette slices or pita.

Ingredients

Scale

Tomato Mixture

  • 4 Roma tomatoes, diced
  • ¼ cup fresh basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt & black pepper, to taste

Cheese Base

  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ½ cup feta cheese, crumbled
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Prepare the Tomato Mixture: In a bowl, combine the diced Roma tomatoes, chopped fresh basil, minced garlic, extra virgin olive oil, and balsamic vinegar. Season the mixture with salt and black pepper to taste. Let this mixture marinate while you prepare the cheese base, allowing the flavors to meld.
  2. Prepare the Cheese Base: In a food processor, blend softened cream cheese, sour cream, crumbled feta cheese, fresh lemon juice, optional red pepper flakes, and grated Parmesan cheese until the mixture is smooth and creamy.
  3. Assemble the Dip: Spread the creamy cheese mixture evenly over a serving plate or shallow dish to create a smooth base layer. Then, spoon and evenly distribute the marinated tomato mixture on top of the cheese base.
  4. Serve & Enjoy: Garnish the dip with extra fresh basil leaves if desired. Serve immediately with toasted baguette slices or pita bread for dipping and enjoying this fresh, creamy, and tangy appetizer.

Notes

  • For best flavor, allow the tomato mixture to marinate for at least 10 minutes before assembling.
  • You can adjust the amount of red pepper flakes according to your preferred spice level or omit them for a milder dip.
  • Use a good-quality extra virgin olive oil for richer taste.
  • Serve the dip immediately to keep the bread crisp and tomatoes fresh.
  • Leftovers can be refrigerated in an airtight container for up to 2 days.
