- 250g rotini pasta
- 2 tablespoons butter
- 1 cup heavy cream
- 2 tablespoons cream cheese
- 1 tablespoon ranch seasoning
- 1 teaspoon Cajun seasoning
- 1/2 cup shredded Parmesan cheese
- 2 tablespoons chopped parsley or green onion
Instructions
- Marinate Chicken: Cut chicken into bite-sized chunks and marinate with olive oil, minced garlic, buffalo sauce, salt, and pepper for 10–15 minutes to infuse flavors.
- Sear Chicken: Heat a skillet over medium-high heat and sear the marinated chicken pieces until golden brown and fully cooked through. Remove and set aside.
- Cook Pasta: Boil rotini pasta in salted water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- Prepare Sauce Base: In a saucepan, melt butter and stir in cream cheese and ranch seasoning, mixing until smooth and creamy.
- Add Cream and Seasonings: Whisk in heavy cream, then add Cajun seasoning and Parmesan cheese. Simmer gently until the sauce thickens.
- Toss Pasta in Sauce: Add cooked pasta to the sauce and stir to coat evenly. Use reserved pasta water to achieve desired sauce consistency if needed.
- Serve: Plate the creamy Cajun Alfredo pasta and top with the buffalo garlic chicken bites. Garnish with chopped parsley or green onion before serving.
Notes
- For a spicier kick, increase the buffalo sauce or Cajun seasoning amount.
- Chicken thighs can be used instead of breast for juicier bites.
- Use freshly grated Parmesan for best flavor.
- Adjust the cream quantity if you prefer a thicker or thinner sauce.
- Gluten-free pasta can be substituted to make the dish gluten-free.
