Description

This Buffalo Garlic Chicken Bites with Creamy Ranch Cajun Alfredo Pasta recipe combines spicy buffalo-marinated chicken bites with a rich, creamy Cajun Alfredo pasta. The dish features tender chicken seared to perfection and a luscious sauce made with heavy cream, cream cheese, ranch seasoning, and Parmesan, delivering a flavorful and satisfying meal perfect for a quick weeknight dinner or a casual get-together.

Ingredients

Scale

Chicken Bites

  • 500g chicken breast or thighs, cut into bite-sized chunks
  • 3 tablespoons buffalo sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Pasta and Sauce

  • 250g rotini pasta
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 2 tablespoons cream cheese
  • 1 tablespoon ranch seasoning
  • 1 teaspoon Cajun seasoning
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons chopped parsley or green onion

Instructions

  1. Marinate Chicken: Cut chicken into bite-sized chunks and marinate with olive oil, minced garlic, buffalo sauce, salt, and pepper for 10–15 minutes to infuse flavors.
  2. Sear Chicken: Heat a skillet over medium-high heat and sear the marinated chicken pieces until golden brown and fully cooked through. Remove and set aside.
  3. Cook Pasta: Boil rotini pasta in salted water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  4. Prepare Sauce Base: In a saucepan, melt butter and stir in cream cheese and ranch seasoning, mixing until smooth and creamy.
  5. Add Cream and Seasonings: Whisk in heavy cream, then add Cajun seasoning and Parmesan cheese. Simmer gently until the sauce thickens.
  6. Toss Pasta in Sauce: Add cooked pasta to the sauce and stir to coat evenly. Use reserved pasta water to achieve desired sauce consistency if needed.
  7. Serve: Plate the creamy Cajun Alfredo pasta and top with the buffalo garlic chicken bites. Garnish with chopped parsley or green onion before serving.

Notes

  • For a spicier kick, increase the buffalo sauce or Cajun seasoning amount.
  • Chicken thighs can be used instead of breast for juicier bites.
  • Use freshly grated Parmesan for best flavor.
  • Adjust the cream quantity if you prefer a thicker or thinner sauce.
  • Gluten-free pasta can be substituted to make the dish gluten-free.
