Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Caprese Topping:
- 2 large tomatoes, sliced
- 8 ounces fresh mozzarella, sliced
- 1/4 cup balsamic glaze
- 1/4 cup fresh basil leaves
Instructions
- Pound and Season Chicken: Pound the chicken breasts to an even thickness and season both sides with Italian seasoning, garlic powder, salt, and pepper.
- Cook Chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes per side until golden and cooked through.
- Add Caprese Topping: Reduce heat to low, then top each piece of chicken with tomato slices and mozzarella slices. Cover the skillet and cook for 2–3 minutes, until the cheese melts.
- Finish and Serve: Drizzle with balsamic glaze and garnish with fresh basil before serving.
Notes
- For extra flavor, marinate the chicken in olive oil, garlic, and Italian herbs for 30 minutes before cooking.
- If you don’t have balsamic glaze, reduce balsamic vinegar over low heat until thickened.
