- 1/2 cup cherry tomatoes
- 1 teaspoon balsamic vinegar
Instructions
- Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, chopped fresh basil, salt, and pepper until thoroughly combined and slightly frothy.
- Cook Eggs in Skillet: Heat olive oil in a medium non-stick skillet over medium heat. Pour in the egg mixture and cook undisturbed for about 2 minutes until the edges begin to set but the center remains slightly runny.
- Add Cheese and Broil: Evenly scatter the mozzarella cheese on top of the eggs. Transfer the skillet to the oven and broil for 2 to 3 minutes until the eggs are fully set and the cheese is melted and bubbly. Keep a close eye to avoid burning.
- Add Tomatoes and Serve: Remove the frittata from the oven and top with blistered cherry tomatoes. Drizzle with balsamic vinegar and serve immediately while warm.
