Description

This Caprese Frittata is a quick and easy Italian-inspired dish combining fluffy eggs with fresh basil, mozzarella, and blistered cherry tomatoes, finished with a drizzle of tangy balsamic vinegar. Perfect for a light breakfast or brunch for two.

Ingredients

Scale

Egg Mixture

  • 4 large eggs
  • 2 tablespoons milk (or heavy cream/coconut milk)
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste

Other Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup fresh mozzarella cheese, sliced or shredded
  • 1/2 cup cherry tomatoes
  • 1 teaspoon balsamic vinegar

Instructions

  1. Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, chopped fresh basil, salt, and pepper until thoroughly combined and slightly frothy.
  2. Cook Eggs in Skillet: Heat olive oil in a medium non-stick skillet over medium heat. Pour in the egg mixture and cook undisturbed for about 2 minutes until the edges begin to set but the center remains slightly runny.
  3. Add Cheese and Broil: Evenly scatter the mozzarella cheese on top of the eggs. Transfer the skillet to the oven and broil for 2 to 3 minutes until the eggs are fully set and the cheese is melted and bubbly. Keep a close eye to avoid burning.
  4. Add Tomatoes and Serve: Remove the frittata from the oven and top with blistered cherry tomatoes. Drizzle with balsamic vinegar and serve immediately while warm.

Notes

  • You can substitute milk with heavy cream or coconut milk for a richer texture.
  • Use fresh mozzarella for best melting and flavor.
  • If you don’t have a broiler-safe skillet, transfer the frittata to an oven-safe dish before broiling.
  • Cherry tomatoes can be quickly blistered in a separate pan before adding as topping for more flavor.
  • Adjust seasoning with salt and pepper to taste before cooking.
