Description

A creamy, tangy, and spicy Cheesy Buffalo Chicken Dip that’s perfect for parties or game day. Made with shredded rotisserie chicken, hot sauce, mayonnaise, cheese, and blue cheese crumbles, baked to bubbly perfection and served warm with chips or crackers.

Ingredients

Scale

Main Ingredients

  • 2 cups cooked rotisserie chicken (shredded)
  • 1/3 cup Frank’s Hot Sauce
  • 1 cup mayonnaise
  • 1 cup shredded cheese (Mexican blend recommended)
  • 1/2 teaspoon lemon juice
  • 3 tablespoons green onions (finely chopped)
  • 1/3 cup crumbled blue cheese

For Garnish and Serving

  • Green onions (chopped, to garnish)
  • Crackers or tortilla chips

Instructions

  1. Preheat the oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the dip.
  2. Toss chicken with hot sauce: In a medium bowl, mix the shredded rotisserie chicken thoroughly with Frank’s Hot Sauce to evenly coat the chicken in flavor.
  3. Combine remaining ingredients: Stir in the mayonnaise, shredded cheese, lemon juice, and finely chopped green onions into the chicken mixture until everything is well combined.
  4. Prepare the baking dish: Spread the mixture evenly into a 1 and 1/2 quart shallow dish, such as a pie plate, then sprinkle the crumbled blue cheese evenly on top.
  5. Bake the dip: Bake uncovered in the preheated oven for about 20 minutes, or until the dip is bubbly and heated through.
  6. Serve: Remove from the oven, garnish with additional chopped green onions if desired, and serve warm with tortilla chips, Ritz crackers, or pita chips.

Notes

  • You can use any cooked chicken for this recipe, but rotisserie chicken provides great flavor and convenience.
  • Adjust the amount of hot sauce depending on your desired spice level.
  • For a creamier dip, add a little cream cheese or sour cream if desired.
  • This dip can be prepared ahead and refrigerated, then baked just before serving.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated.
