- 2 large eggs
- 1 cup buttermilk
- 1/4 cup unsalted butter (melted)
- 1 tablespoon fresh chopped dill (optional)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix Dry Ingredients: In a large bowl, combine flour, baking powder, baking soda, garlic powder, salt, and black pepper. Add cheddar cheese and pickles.
- Combine Wet Ingredients: In a separate bowl, mix eggs, buttermilk, melted butter, and pickle juice. Pour into dry ingredients and mix gently.
- Add Dill: Fold in fresh dill, if desired. Transfer batter to the loaf pan and bake.
- Bake: Bake for 45–50 minutes until a toothpick inserted in the center comes out clean. Cool before slicing and serving.
Notes
- You can substitute cheddar with Swiss or pepper jack for a flavor twist.
- For a spicier kick, add chopped pickled jalapeños.
