Description

This vibrant Chicken and Lime Soup is a zesty, comforting dish packed with shredded chicken, fresh lime juice, and a blend of vegetables simmered in flavorful chicken broth. Enhanced with cilantro and optionally served with sour cream and avocado slices, this soup offers a perfect balance of tangy and savory, making it an ideal light meal or starter.

Ingredients

Scale

Soup Ingredients

  • 1 tablespoon olive oil
  • 2 sticks celery, chopped
  • 1 medium onion, chopped
  • 2 (10 fluid ounce) cans chicken broth
  • 1 (12 fluid ounce) can corn
  • 1 (18.3 fluid ounce) can stewed or diced tomatoes with Italian herbs
  • 2 cloves garlic, minced
  • 1 cup leftover or rotisserie chicken, shredded into bite-size pieces
  • Juice of 1 lime
  • 1 handful fresh cilantro, chopped
  • Salt and pepper, to taste

Optional Garnishes

  • Sour cream
  • Fresh avocado slices

Instructions

  1. Heat the Olive Oil and Sauté Vegetables: Add the olive oil to a pan and heat over medium heat. Chop the onion and celery, then add them to the pan to cook.
  2. Combine Ingredients: After about 5 minutes, once the onion and celery have softened, add the chicken broth, corn, stewed tomatoes, minced garlic, shredded chicken, and lime juice to the pan.
  3. Simmer the Soup: Increase the heat to medium-high until the soup is just about to boil, then reduce the heat to medium-low and let it simmer gently for about five minutes.
  4. Add Cilantro and Continue Cooking: While the soup is simmering, chop the fresh cilantro. Add it to the soup and simmer for an additional five minutes for the flavors to meld.
  5. Season and Serve: Season the soup with salt and pepper to taste. Serve immediately with a dollop of sour cream and fresh avocado slices if desired.

Notes

  • Using leftover or rotisserie chicken saves time and adds great flavor.
  • Adjust the lime juice amount to your preferred level of tanginess.
  • If you prefer a spicier soup, add a pinch of cayenne pepper or chopped jalapeños.
  • Fresh cilantro can be substituted with parsley if unavailable.
  • For a creamier texture, blend a small portion of the soup and stir it back in before serving.
