Instructions

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables are softened and fragrant.
  2. Add Garlic: Stir in the minced garlic and cook for another 30 seconds to release its aroma without burning.
  3. Combine Broth and Pasta: Pour in the chicken broth and bring the mixture to a boil. Then add the dried thyme, dried parsley, and uncooked star pasta to the pot.
  4. Simmer Pasta: Reduce the heat to a simmer and cook for about 8 minutes, or until the star pasta is tender but not mushy.
  5. Add Chicken and Heat Through: Stir in the shredded cooked chicken and simmer for an additional 2 to 3 minutes, allowing the chicken to warm throughout.
