Description

This comforting Chicken Cobbler Dinner Casserole combines tender shredded chicken, mixed vegetables, and a creamy sauce topped with a golden biscuit crust. Perfect for family dinners, this easy one-dish meal is baked to perfection with layers of savory flavors and melty cheddar cheese.

Ingredients

Scale

Chicken and Vegetables

  • 2 cups shredded cooked chicken
  • 1 cup frozen peas and carrots
  • 1 cup frozen corn

Sauce

  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup unsalted butter, melted

Biscuit Topping

  • 1 cup biscuit mix (like Bisquick)
  • 1 cup milk
  • 1 cup shredded cheddar cheese, divided (1/2 cup for batter, 1/2 cup for topping)

Instructions

  1. Preheat and prepare baking dish: Preheat the oven to 350°F (175°C). Place the butter in a 9×13 inch baking dish and put it in the oven to melt. Once melted, remove and swirl the butter to coat the bottom evenly.
  2. Layer chicken: Evenly spread the shredded cooked chicken over the melted butter in the dish.
  3. Add vegetables: Top the chicken layer with the frozen peas and carrots, then add the frozen corn on top. Do not stir the layers.
  4. Prepare biscuit batter: In a separate bowl, mix the biscuit mix, milk, and 1/2 cup of shredded cheddar cheese until just combined to form the biscuit topping batter.
  5. Pour biscuit batter: Pour the biscuit mixture evenly over the layered chicken and vegetables without stirring.
  6. Mix and add sauce: In another bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the biscuit batter layer without mixing.
  7. Add cheese topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly on top of the casserole.
  8. Bake casserole: Bake in the preheated oven for 45–50 minutes, or until the biscuit topping is golden brown and the casserole center is set.
  9. Rest and serve: Let the casserole rest for about 10 minutes before serving to allow the layers to set and cool slightly.

Notes

  • Use fully cooked shredded chicken to speed up preparation.
  • Do not stir the layers after assembling to maintain the cobbler structure.
  • If you prefer, you can substitute the mixed frozen vegetables for fresh, but you may need to increase baking time slightly.
  • Letting the casserole rest before serving helps it hold together better when sliced.
  • You can add herbs like thyme or parsley in the biscuit batter for extra flavor.
