Instructions
- Preheat and prepare baking dish: Preheat the oven to 350°F (175°C). Place the butter in a 9×13 inch baking dish and put it in the oven to melt. Once melted, remove and swirl the butter to coat the bottom evenly.
- Layer chicken: Evenly spread the shredded cooked chicken over the melted butter in the dish.
- Add vegetables: Top the chicken layer with the frozen peas and carrots, then add the frozen corn on top. Do not stir the layers.
- Prepare biscuit batter: In a separate bowl, mix the biscuit mix, milk, and 1/2 cup of shredded cheddar cheese until just combined to form the biscuit topping batter.
- Pour biscuit batter: Pour the biscuit mixture evenly over the layered chicken and vegetables without stirring.
- Mix and add sauce: In another bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the biscuit batter layer without mixing.
- Add cheese topping: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly on top of the casserole.
