Instructions

  1. Sauté Aromatics: Heat a large skillet over medium heat and add a drizzle of oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant, releasing their aromatic flavors.
  2. Cook Ground Chicken: Add ground chicken to the skillet. Cook, breaking it up into small crumbles, until browned and fully cooked through, about 5-7 minutes.
  3. Season the Meat: Stir in soy sauce, sesame oil, salt, and black pepper. Mix thoroughly to evenly coat the chicken with the seasonings.
  4. Add Vegetables: Add the coleslaw mix and chopped green onions. Cook for 2 to 3 minutes, stirring occasionally, until the vegetables are slightly softened but still retain some crunch. Remove from heat and allow the filling to cool slightly.
  5. Assemble Egg Rolls: Place an egg roll wrapper on a flat surface in a diamond shape. Spoon about 2 tablespoons of the filling into the center of the wrapper. Fold the bottom corner up over the filling, fold in the sides snugly, and roll tightly upward. Seal the edge with a little water to ensure it sticks.
