Description

A fresh and vibrant Cilantro Lime Cauliflower Rice recipe that’s quick to prepare, perfect as a healthy low-carb side dish. This skillet-cooked cauliflower rice is sautéed with onions and garlic, then brightened with zesty lime and fresh cilantro for a flavorful twist.

Ingredients

Scale

Vegetables and Herbs

  • 1 cup white onion (finely diced)
  • 2 cloves garlic (finely minced)
  • 4 cups cauliflower rice (about 1 lb.)
  • ½ cup cilantro (finely chopped)

Seasonings and Oils

  • 2 Tbsp. oil
  • 1 tsp. salt (to taste)
  • ¼ tsp. black pepper
  • 1 Tbsp. lime juice (freshly squeezed)
  • 1 tsp. grated lime zest

Instructions

  1. Sauté Onion: Add oil and diced onion to a large skillet and cook for 2-3 minutes over medium heat until the onion becomes translucent.
  2. Add Garlic: Mix in the finely minced garlic and continue sautéing for an additional 30 seconds to release its aroma.
  3. Cook Cauliflower Rice: Add the cauliflower rice along with salt and pepper to the skillet. Continue cooking over medium heat for 6-8 minutes, stirring occasionally until the cauliflower is tender but not mushy.
  4. Finish with Lime and Cilantro: Remove from heat and stir in freshly squeezed lime juice, lime zest, and chopped cilantro. Mix well to combine all flavors before serving.

Notes

  • Use fresh lime juice and zest for the brightest flavor.
  • For a spicier kick, add red pepper flakes or diced jalapeño during cooking.
  • Cauliflower rice can be purchased pre-riced or made at home by pulsing cauliflower florets in a food processor.
  • Serve warm as a side dish with grilled meats, tacos, or as a base for bowls.
