Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prepare for baking.
- Beat Egg Whites: In a clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form, ensuring the whites are fluffy and hold shape.
- Mix Yolks and Cottage Cheese: In a separate bowl, combine the egg yolks with the cottage cheese, vanilla extract, and honey or maple syrup if using, mixing until smooth and well combined.
- Fold Mixtures: Gently fold the egg yolk mixture into the beaten egg whites, taking care not to deflate the whipped whites, to maintain a light texture.
- Shape and Add Blueberries: Spoon the batter onto the prepared baking sheet in round shapes, then evenly top each with fresh blueberries.
- Bake: Bake in the preheated oven for 25 to 30 minutes or until the cloud bread is golden brown and fully set.
- Cool and Serve: Allow the cloud bread to cool completely on a wire rack before serving to let it firm up and enhance the texture.
