Pasta and Sauce

- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- Salt to taste
- 1/2 cup reserved pasta water

- 2 cups baby spinach
- Optional: red pepper flakes

Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the minced garlic and finely chopped shallot, sautéing for 2 to 3 minutes until fragrant and translucent.
- Make the Sauce: Lower the heat and add the Boursin Garlic & Fine Herbs cheese to the skillet, breaking it up as it melts. Pour in the heavy cream and stir continuously until the sauce becomes smooth and creamy.
- Add Parmesan and Seasoning: Stir in the grated Parmesan cheese and black pepper. Mix well to combine all the flavors evenly.
- Toss Pasta in Sauce: Add the cooked pasta to the skillet with the sauce, tossing to coat the noodles thoroughly. If the sauce is too thick, gradually pour in the reserved pasta water until the desired consistency is reached.
- Wilt the Spinach: Stir in the baby spinach and cook for 1 to 2 minutes, just until it wilts and blends into the creamy sauce.
- Season and Serve: Taste the pasta and adjust the salt to your preference. Serve immediately, garnished with optional red pepper flakes and fresh parsley for added flavor and color.
