Description

This creamy strawberry banana Jello is a wonderfully refreshing and fruity dessert that combines the classic strawberry Jell-O with real fruit and a velvety sour cream blend. Perfectly chilled and molded, it’s a delightful treat that’s easy to prepare and serves up to 10 people. The luscious combination of frozen strawberries, fresh banana, and a hint of lemon juice creates a vibrant flavor balanced with creamy texture, making it an ideal summer dessert or a nostalgic favorite for any occasion.

Ingredients

Scale

Jello Mixture

  • 1 6-oz package Strawberry Jell-O
  • 2 cups boiling water
  • 24 ounces frozen strawberries (whole or sliced)
  • 1 banana
  • 2 tablespoons lemon juice
  • 2 cups sour cream, light or regular

Garnish

  • Fresh strawberries (optional)

Instructions

  1. Dissolve Jello: Empty the 6-ounce package of Strawberry Jell-O into a large bowl. Carefully pour 2 cups of boiling water over the Jell-O powder, then stir until the Jell-O is completely dissolved.
  2. Add Frozen Strawberries: Stir in 24 ounces of frozen strawberries into the dissolved Jell-O mixture until the berries are mostly thawed. Once combined, pour the mixture into a large blender.
  3. Prepare Banana Mixture: In a small bowl, roughly mash 1 banana together with 2 tablespoons of lemon juice to prevent browning and add brightness. Add this mashed banana mixture to the blender with the strawberry Jello blend.
  4. Add Sour Cream and Blend: Pour in 2 cups of sour cream (light or regular) to the blender. Blend the mixture for about 30 seconds until smooth but some small lumps can remain for texture.
  5. Prepare Mold: Lightly grease a jello mold or a 10-12 cup bundt pan with nonstick spray to ensure easy release. Alternatively, you can use a decorative bowl without spraying.
  6. Chill: Pour the blended Jello mixture into the prepared mold. Cover tightly with plastic wrap and refrigerate for several hours or preferably overnight until completely set and chilled.
  7. Unmold the Jello: To remove the Jello from the mold, place a serving plate over the mold and flip it upside down. If it doesn’t release easily, dip the bottom of the mold into a bowl of hot water for 1-3 seconds to loosen the edges, then invert again.
  8. Serve: Serve the creamy strawberry banana Jello chilled with fresh strawberries on top or around for garnish, adding a fresh burst of flavor and appealing presentation.

Notes

  • You can substitute frozen strawberries with fresh if preferred; just allow extra time for the berries to soften.
  • Using light or regular sour cream will slightly alter the richness and calorie content.
  • For a more vibrant lemon flavor, you may add a teaspoon of lemon zest along with the lemon juice.
  • This dessert can be made a day ahead and kept refrigerated to allow flavors to meld perfectly.
  • Make sure not to overblend to maintain a creamy but slightly textured consistency.
  • If you want to make the dessert vegan or dairy-free, substitute sour cream with coconut cream and use a plant-based gelatin alternative.
