Pasta:
- 12 ounces linguine or spaghetti
Lobster:
- 2 lobster tails (about 6 ounces each)
Sauce:
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small shallot, finely chopped
- 1 can (14 ounces) crushed tomatoes
- 1/2 cup heavy cream
- 1/2 cup dry white wine
- 1/4 teaspoon red pepper flakes
- 2 tablespoons tomato paste
- 2 tablespoons unsalted butter
- 1/4 cup freshly grated Parmesan cheese, plus more for serving
- 2 tablespoons chopped fresh basil
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions
- Cook the Pasta: Boil salted water and cook pasta until al dente. Drain, reserving 1/2 cup pasta water.
- Prepare Lobster: Remove lobster meat from shells and chop into pieces.
- Make the Sauce: Sauté garlic and shallot. Add tomato paste, wine, crushed tomatoes, seasonings, cream, and butter. Simmer, then add lobster.
- Combine: Toss cooked pasta in the sauce, adding reserved water as needed. Stir in Parmesan and basil.
- Serve: Top with extra Parmesan and serve with lemon wedges.
