Instructions

  2. Prepare Carbonara Sauce: While the pasta cooks, whisk together the egg yolks, freshly grated Parmesan cheese, salt, and freshly ground black pepper in a bowl until the mixture is smooth and well combined.
  3. Sauté Garlic: Heat 1 tablespoon of olive oil or butter in a skillet over medium-low heat. Add the minced garlic (if using) and sauté for about 30 seconds until fragrant but not browned. Remove the skillet from heat immediately to prevent cooking the garlic further.
  4. Combine Pasta and Sauce: Add the drained tortellini to the skillet with the garlic oil. Off the heat, pour the egg and cheese mixture over the pasta along with 2 tablespoons of the reserved pasta water.
