Linguine:

  • 12 oz linguine

Shrimp:

  • 1 lb large shrimp (peeled and deveined)

  • 3 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups baby spinach
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley (chopped, for garnish)


Instructions

  1. Cook Linguine: Cook linguine until al dente, drain, and set aside.
  2. Cook Shrimp: Sauté shrimp in olive oil and butter until pink and cooked. Remove and set aside.
  3. Prepare Sauce: Sauté garlic, cherry tomatoes, sun-dried tomatoes, add cream, Parmesan, and spinach. Season with red pepper flakes, salt, and pepper.
  4. Combine: Add shrimp back to the skillet, stir in cooked linguine. Serve hot, garnished with parsley.
