Linguine:
- 12 oz linguine
Shrimp:
- 1 lb large shrimp (peeled and deveined)
Other Ingredients:
- 1 tablespoon olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 2 cups baby spinach
- 1/2 cup sun-dried tomatoes (chopped)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
- Cook Linguine: Cook linguine until al dente, drain, and set aside.
- Cook Shrimp: Sauté shrimp in olive oil and butter until pink and cooked. Remove and set aside.
- Prepare Sauce: Sauté garlic, cherry tomatoes, sun-dried tomatoes, add cream, Parmesan, and spinach. Season with red pepper flakes, salt, and pepper.
- Combine: Add shrimp back to the skillet, stir in cooked linguine. Serve hot, garnished with parsley.
