Description

This Crispy Balsamic Thyme Potato Torte is a savory and elegant baked dish featuring thinly sliced potatoes layered and infused with a flavorful balsamic glaze, fresh thyme, and a hint of garlic, topped with optional Parmesan cheese for a golden, crispy finish. Perfect as a side or a vegetarian main, it pairs wonderfully with roasted meats or a fresh salad.

Ingredients

Scale

For the Potato Torte:

  • 4 medium-sized potatoes, peeled and thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp fresh thyme, chopped
  • Salt and pepper, to taste
  • ½ cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 1 tbsp butter (for greasing)

For the Balsamic Glaze:

  • ½ cup balsamic vinegar
  • ½ cup olive oil
  • 2 tbsp lemon juice (optional)

Instructions

  1. Prepare the Potato Torte: Preheat the oven to 375°F (190°C). Grease a round baking dish with butter and set aside.
  2. Make the glaze: In a small bowl, mix olive oil, balsamic vinegar, garlic, fresh thyme, salt, and pepper to create the balsamic glaze.
  3. Toss the potatoes: In a large bowl, add the thinly sliced potatoes and toss them thoroughly in the balsamic glaze mixture until evenly coated.
  4. Layer the potatoes: Arrange the potatoes in a spiral pattern in the prepared baking dish, making sure to slightly overlap each slice. Firmly press the layers down as you layer.
  5. Top with cheese: If using Parmesan cheese, sprinkle it evenly on top of the layered potatoes to add a crispy, cheesy crust.
  6. Bake: Cover the baking dish with aluminum foil and bake for 40 minutes. Remove the foil and continue baking for an additional 20 minutes until the top is golden and crispy.
  7. Cool and serve: Allow the torte to cool for a few minutes before slicing and serving for best texture and flavor.

Notes

  • Make sure the potatoes are sliced thinly and evenly to ensure uniform cooking.
  • If you prefer a stronger balsamic flavor, you can increase the balsamic vinegar slightly in the glaze.
  • The Parmesan cheese topping is optional but adds a lovely golden crust and depth of flavor.
  • Letting the torte rest before serving helps it to set and makes slicing easier.
  • This dish can be made ahead of time and reheated in the oven to maintain crispiness.
