Instructions
- Mix Butter, Eggs, and Sugar: In a bowl, combine the softened butter, whole eggs, and granulated sugar. Mix thoroughly until the mixture is smooth and well blended.
- Add Leavening Agents and Flour: Stir in the baking powder, baking soda, salt, and one cup of the all-purpose flour. Mix just until combined to avoid overworking the batter.
- Incorporate Remaining Flour: Add the second cup of flour to the mixture, stirring until the batter becomes thick and consistent without any lumps.
- Add Mashed Bananas: Mash the bananas well to a smooth consistency and fold them into the batter. Mix until fully incorporated, ensuring the banana flavor is evenly distributed.
- Add Optional Mix-ins: If desired, gently fold in the chocolate chips and/or chopped nuts, giving an even distribution throughout the batter.
- Prepare Crock Pot and Pour Batter: Butter the inside of a small crock pot dish to prevent sticking. Pour the batter into the prepared crock pot, smoothing the top as needed.
- Cook the Banana Bread: Place the crock pot dish into a 6-quart crock pot and cook on the low setting for approximately 4 hours. The banana bread is done when the top is slightly brown and springs back when touched.
