  • 3 tablespoons honey

Instructions

  1. Prep the carrots: Peel and slice the carrots if using whole carrots, or simply use bagged baby-cut carrots for convenience.
  2. Melt the glaze ingredients: In a small bowl, microwave the butter and honey together until melted and combined into a smooth glaze.
  3. Combine carrots and glaze: Place the carrots in the slow cooker, pour the honey-butter mixture over the top, add salt and pepper if desired, and toss well to coat evenly.
  4. Cook the carrots: Set the slow cooker to high heat and cook the carrots for 3 hours, or until tender. Alternatively, you may cook on low for approximately 6 hours, though this method is not tested.
  5. Finish and serve: Once tender, toss the carrots again to redistribute the glaze, garnish with fresh chopped parsley if using, and serve warm.
