  • 1/2 cup Ground nuts or almond flour (Experiment with walnuts or almonds for variety)


Instructions

  1. Toast Sesame Seeds: In a pan over medium heat, toast the roasted sesame seeds for 3-5 minutes until they become fragrant. This enhances their nutty aroma and flavor, which will be the base of your cookies.
  2. Prepare Sweet Syrup: In a pot over medium heat, combine sugar and water, stirring until the sugar is fully dissolved. Then mix in the honey and rice syrup, continuing to stir until everything is well incorporated. Remove from heat and allow the mixture to cool to room temperature.
  3. Grind Sesame Seeds and Mix Dough: Use a blender to finely grind the toasted sesame seeds into a powder. Transfer the powder to a mixing bowl and combine with sea salt and the cooled honey syrup mixture. Stir until a consistent dough forms that holds together well.
  4. Shape the Cookies: Using a traditional Dasik mold, press the dough firmly into each mold design to create intricate patterns. This step is key to achieving authentic cookie shapes.
  5. Remove and Dry: Gently tap the molds to release the cookies without breaking them. Place the cookies on a flat surface and allow them to air dry completely before serving. This drying ensures they hold their shape and develop the right texture.
