Brownie Layer:
- 1 box (18.3 oz) brownie mix (plus ingredients listed on box, typically eggs, oil, and water)
Coconut Marshmallow Topping:
- 1 cup sweetened shredded coconut
- 1/2 cup granulated sugar
- 1/2 cup light corn syrup
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup mini marshmallows
Optional Toppings:
- 1/2 cup pink-tinted shredded coconut
- 1/2 cup chocolate chips
Instructions
- Prepare the Brownie Base: Mix and bake the brownie batter in a 9×13-inch pan according to package instructions. Cool completely.
- Make the Coconut Marshmallow Topping: In a saucepan, cook sugar, corn syrup, water, salt, and vanilla until boiling. Add marshmallows, stir until smooth, then mix in shredded coconut. Spread over brownies.
- Add Optional Toppings: Sprinkle pink coconut on top and drizzle with melted chocolate if desired. Allow to set before cutting into squares.
Notes
- You can tint shredded coconut with red food coloring for a Sno Ball look.
