Description

A quick and flavorful Doritos Taco Salad featuring seasoned ground beef, fresh veggies, black beans, cheddar cheese, and crispy nacho cheese Doritos, all tossed in your favorite dressing for a satisfying Mexican-inspired meal.

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Salad Base

  • 3 to 4 Romaine lettuce hearts (rinsed then chopped)
  • 1 cup black beans (rinsed)
  • 1 large tomato, chopped OR sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese

Toppings and Dressing

  • 1 ½ cups nacho cheese Doritos (broken into bite-size pieces)
  • 1 cup Catalina dressing OR your favorite salad dressing (ranch dressing recommended)
  • Fresh cilantro (optional)


Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, brown and crumble the ground beef. Drain off any grease. Add the taco seasoning packet along with the amount of water called for on the seasoning packet. Stir the mixture until it comes to a boil, then reduce the heat to low and simmer for 10 minutes. Remove from heat and allow the meat to cool slightly.
  2. Combine Salad Ingredients: In a large salad bowl, add the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled ground beef to the bowl and gently toss everything together to combine evenly. You can serve immediately or chill in the refrigerator until ready to eat. Avoid adding the Doritos chips until just before serving to maintain their crunch.
  3. Add Chips and Dressing: When you are ready to serve, add the broken nacho cheese Doritos to the salad along with the Catalina dressing or your preferred salad dressing. Toss the entire salad to coat it evenly. Garnish with fresh cilantro if desired and serve immediately for best texture and flavor.

Notes

  • Do not add Doritos chips until just before serving to prevent sogginess.
  • You can substitute Catalina dressing with ranch or your favorite salad dressing.
