Description

This Easy Cowboy Cornbread Casserole is a hearty and flavorful one-dish meal that combines savory ground beef, beans, corn, and a cheesy cornbread topping. Perfect for a cozy dinner any night of the week!

Ingredients

Scale

Main Dish:

  • 1 pound ground beef
  • 1 small onion (diced)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 can (10 oz) diced tomatoes with green chilies (undrained)
  • 1 cup shredded cheddar cheese

Cornbread Topping:

  • 1 box (8.5 oz) cornbread mix
  • 1/3 cup milk
  • 1 large egg
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven: Preheat the oven to 375°F.
  2. Sauté: In a large skillet, heat olive oil over medium heat. Sauté diced onion until translucent. Add ground beef and cook until browned. Drain excess fat.
  3. Add Ingredients: Stir in taco seasoning, black beans, corn, and diced tomatoes with green chilies. Simmer for 5 minutes.
  4. Assemble: Pour the mixture into a greased 9×13-inch baking dish and spread evenly. Sprinkle shredded cheese on top.
  5. Prepare Cornbread Topping: In a separate bowl, combine cornbread mix with milk and egg. Pour the batter evenly over the beef mixture.
  6. Bake: Bake uncovered for 25–30 minutes or until the cornbread is golden and cooked through.
  7. Rest and Serve: Let the casserole rest for 5 minutes before serving.

Notes

  • You can swap ground beef with ground turkey or a meatless crumble for a vegetarian version.
  • For extra heat, add chopped jalapeños or a dash of hot sauce to the beef mixture.
