Description

A classic and comforting French onion soup recipe that is easy to make at home. Caramelized onions simmered in a flavorful broth, topped with toasted baguette slices and melted Gruyère cheese.

Onion Mixture:

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 cloves garlic, minced

Soup Base:

  • 1/2 cup dry white wine
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

For Serving:

  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese

Instructions

  1. Caramelize Onions: In a large pot, melt butter and olive oil. Add onions, salt, and sugar. Cook until golden and caramelized.
  2. Add Flavors: Stir in garlic, then deglaze with white wine. Simmer.
  3. Simmer Soup: Add beef broth, Worcestershire sauce, thyme, and bay leaf. Season and simmer.
  4. Prepare Toppings: Toast baguette slices. Remove bay leaf from soup.
  5. Serve: Ladle soup into bowls, top with baguette and cheese. Broil until cheese is melted.

Notes

  • For a vegetarian version, use vegetable broth instead of beef broth.
  • You can substitute Swiss cheese or mozzarella if Gruyère is unavailable.
