Frozen Meatball Pot Roast:

  • 1 (24 oz) bag frozen fully cooked beef meatballs
  • 1 tablespoon olive oil
  • 1 large onion (sliced)
  • 3 cloves garlic (minced)
  • 4 large carrots (peeled and cut into chunks)
  • 3 medium potatoes (cut into chunks)
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon water (optional, for slurry)


Instructions

  1. Heat the olive oil: In a large Dutch oven or oven-safe pot over medium heat, sauté onions and garlic until fragrant.
  2. Cook the meatballs: Add frozen meatballs and cook for 5 minutes.
  3. Add vegetables and broth: Add carrots, potatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir, cover, and bake at 350°F for 1 hour.
  4. Thicken the sauce: Optionally mix cornstarch and water into a slurry and stir into the pot during the last 10 minutes of cooking.
