Frozen Meatball Pot Roast:
- 1 (24 oz) bag frozen fully cooked beef meatballs
- 1 tablespoon olive oil
- 1 large onion (sliced)
- 3 cloves garlic (minced)
- 4 large carrots (peeled and cut into chunks)
- 3 medium potatoes (cut into chunks)
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon cornstarch (optional, for thickening)
- 1 tablespoon water (optional, for slurry)
Instructions
- Heat the olive oil: In a large Dutch oven or oven-safe pot over medium heat, sauté onions and garlic until fragrant.
- Cook the meatballs: Add frozen meatballs and cook for 5 minutes.
- Add vegetables and broth: Add carrots, potatoes, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir, cover, and bake at 350°F for 1 hour.
- Thicken the sauce: Optionally mix cornstarch and water into a slurry and stir into the pot during the last 10 minutes of cooking.
- Serve: Enjoy warm!

- You can use turkey or chicken meatballs instead of beef.
