Description

This Easy Monkey Birthday Cake is a fun and whimsical dessert perfect for celebrations. It features moist chocolate cake layers decorated with peanut butter cookies shaped as monkey ears and face details, all brought to life with smooth chocolate frosting, marshmallows, and chocolate chips for expressive eyes and nose. The cake combines classic flavors with playful presentation, making it a delightful centerpiece for any party.

Ingredients

Scale

Cake

  • 1 box Chocolate Cake Mix (plus ingredients required on package)

Cookies

  • Peanut Butter Cookie dough (from your favorite recipe or mix)
  • 2 large cookies (1 very large and 2 large for ears)

Frosting and Decorations

  • Chocolate Frosting (homemade or store-bought, about 2 cups)
  • 1 large Marshmallow
  • 4 jumbo Chocolate Chips (for eyes and nose)
  • 1/2 cup regular Chocolate Chips (for melting)
  • Chocolate Cookie Icing (for drawing mouth)
  • 2 popsicle sticks (for supporting cookie ears)

Instructions

  1. Prepare the Cakes: Make two round chocolate cakes according to the package directions. Once baked, let them cool completely to ensure easy frosting and decorating.
  2. Make the Cookies: Prepare peanut butter cookie dough following your chosen recipe or mix instructions. Shape one very large cookie and two large cookies for the monkey’s face and ears. Bake them slightly longer if needed to ensure they hold shape.
  3. Trim Cookies: Using a knife, carefully cut off one side of each of the two large ear cookies to give them the desired shape for attaching to the cake.
  4. Melt Chocolate and Attach Popsicle Sticks: Microwave 1/2 cup chocolate chips until melted smoothly. Spread melted chocolate on the back side of the cut cookies and press two popsicle sticks into the sides to provide support.
  5. Set Cookies: Place the chocolate-coated cookies into the refrigerator until the chocolate hardens, securing the popsicle sticks and preventing breakage.
  6. Frost the Cake: Apply chocolate frosting evenly over the cooled cake layers and assemble them as desired on a large plate for decorating.
  7. Add Cookie Ears and Face: Attach the two supported ear cookies on the sides of the frosted cake. Position the very large cookie at the front-bottom top area to form the monkey’s face.
  8. Decorate Face Details: Slice the large marshmallow in half and place the halves above the large cookie for cheeks. Use the jumbo chocolate chips as pupils and nose, securing them with frosting. Finally, use chocolate cookie icing to draw the monkey’s mouth.

Notes

  • For stability, using popsicle sticks with the cookies is essential, especially if transporting the cake.
  • If peanut allergies are a concern, substitute the peanut butter cookie with a different flavor cookie of choice.
  • Ensure cookies are fully cooled and hardened before attaching to the cake to prevent breaking.
  • This cake is best served the same day but can be stored covered in the refrigerator for up to 2 days.
