Instructions
- Preheat & Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup.
- Cream Butter & Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until the mixture is light and fluffy, which creates a smooth base for your cookie dough.
- Add Eggs & Vanilla: Add the eggs one at a time into the creamed mixture, beating well after each addition to fully incorporate. Then stir in the vanilla extract for flavor.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cornstarch. Gradually blend this mixture into the wet ingredients until a uniform dough forms.
- Add Food Coloring & Mix-ins: Stir green food coloring into the dough until you reach your desired shade of green. Gently fold in the white chocolate chips and St. Patrick’s Day sprinkles, distributing them evenly throughout the dough.
- Scoop & Bake: Using a spoon or cookie scoop, drop rounded tablespoon-sized balls of dough onto the prepared baking sheet, spacing them adequately. Bake in the preheated oven for 9-11 minutes, until the edges are set but the centers remain soft.
