Spring Roll Ingredients
- 8 rice paper wrappers
- 1 cup cooked rice noodles
- 1 cup shredded lettuce
- 1/2 cup julienned carrots
- 1/2 cup julienned cucumber
- 1/2 cup thinly sliced red bell pepper
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh basil
- 1/2 cup cooked shrimp, sliced in half lengthwise (optional)
- warm water for softening wrappers
Instructions
- Soften Wrappers: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Lay it flat on a clean surface to prepare for filling.
- Assemble Fillings: In the center of the softened wrapper, layer a small amount of cooked rice noodles, shredded lettuce, julienned carrots, cucumber, red bell pepper, and chopped fresh herbs like mint, cilantro, and basil. Add cooked shrimp halves if desired.
- Roll the Wrapper: Fold the sides of the rice paper wrapper inward to encase the filling, then tightly roll from the bottom up to create a compact spring roll. Ensure the filling is securely enclosed.
- Repeat and Serve: Repeat the softening and rolling process for the remaining wrappers and ingredients. Serve the fresh spring rolls immediately with your choice of peanut sauce or hoisin dipping sauce for a flavorful accompaniment.
Notes
- Substitute shrimp with tofu to make a vegetarian version, or omit protein altogether.
- Serve the rolls chilled for the best texture and flavor experience.
- If preparing ahead of time, cover the rolls with a damp paper towel and plastic wrap to prevent them from drying out.
