Ingredients
Scale
Meatloaf Mixture
- 1.5 lbs ground chicken
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 1 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
Topping and Garnish
- Extra shredded mozzarella cheese for topping
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan to prevent sticking.
- Mix Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and black pepper. Stir gently until all ingredients are just evenly combined to avoid a dense loaf.
- Shape and Bake: Shape the mixture into a loaf shape on the prepared baking sheet or press it firmly into the loaf pan. Bake in the preheated oven for 35 to 40 minutes, until the meatloaf is cooked through and firm to the touch.
- Add Cheese Topping: Remove the meatloaf from the oven and sprinkle extra shredded mozzarella over the top. Return the meatloaf to the oven and bake for an additional 5 to 7 minutes until the cheese has melted and become bubbly.
- Rest and Serve: Allow the meatloaf to rest for 5 minutes after baking to retain its juices. Garnish with fresh chopped parsley, then slice and serve warm with your favorite side dishes.
Notes
- Ensure not to overmix the meatloaf mixture to keep the texture light and tender.
- Using a loaf pan or shaping on a baking sheet works equally well; choose based on your preference for shape and crust.
- Feel free to substitute mozzarella with provolone or cheddar for a different cheese flavor.
- Letting the meatloaf rest before slicing helps it hold together better.
- For gluten-free option, use gluten-free breadcrumbs.
