Description

Grandma’s Rosemary Dinner Rolls are soft, fluffy homemade rolls infused with fresh rosemary, perfect for holiday dinners or any meal. These yeast-leavened rolls have a golden crust brushed with melted butter and topped with flaky sea salt and extra rosemary, delivering a rich and aromatic flavor that complements any table.

Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F)
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter (melted)
  • 1 teaspoon salt
  • 1 large egg
  • 1 tablespoon fresh rosemary (finely chopped)

Topping Ingredients

  • 2 tablespoons melted butter (for brushing)
  • Extra fresh rosemary
  • Flaky sea salt

Instructions

  1. Activate the Yeast: In a small bowl, dissolve the active dry yeast in the warm milk with a pinch of sugar. Let the mixture sit for 5–10 minutes until foamy, indicating that the yeast is active and ready to use.
  2. Prepare the Dough: In a large bowl, combine the flour, sugar, and salt. Add the yeast mixture, melted butter, egg, and finely chopped rosemary. Mix the ingredients until a soft dough forms.
  3. Knead the Dough: Turn the dough onto a floured surface and knead for 8–10 minutes until smooth and elastic. Alternatively, you can use a stand mixer fitted with a dough hook and knead for 5–6 minutes to achieve the same texture.
  4. First Rise: Place the kneaded dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until the dough doubles in size.
  5. Shape the Rolls: Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and arrange them evenly in a greased 9×13-inch baking dish or on a parchment-lined baking sheet.
  6. Second Rise: Cover the shaped rolls and let them rise again for 30–40 minutes until they become puffy.
  7. Preheat the Oven: While the rolls are rising, preheat your oven to 375°F (190°C).
  8. Prepare for Baking: Brush the tops of the risen rolls with melted butter. Sprinkle extra fresh rosemary and flaky sea salt over the top for added flavor and texture.
  9. Bake the Rolls: Bake the rolls in the preheated oven for 18–22 minutes, or until they turn golden brown and sound hollow when tapped.
  10. Cool and Serve: Let the rolls cool slightly before serving to allow the flavors to develop and to handle them easily.

Notes

  • For a richer flavor, substitute half of the milk with buttermilk.
  • These rolls can be made ahead of time and reheated just before serving for convenience.
  • Freeze leftover rolls for up to 1 month to maintain freshness.
