Scale
Marinade Ingredients
- ¼ cup olive oil
- 1 tablespoon red wine vinegar (or more to taste)
- 1 lemon (juice only)
- 1 teaspoon honey (or more to taste)
- 1 teaspoon dried garlic powder
- 2 teaspoons dried oregano
- ½ teaspoon salt (or more to taste)
- ¼ teaspoon ground paprika
- ¼ teaspoon ground black pepper
Main Ingredients
- 1 pound chicken parts (preferably boneless, skinless chicken breast)
Instructions
- Make marinade: In a medium measuring jug, whisk together the olive oil, red wine vinegar, lemon juice, honey, dried garlic powder, dried oregano, salt, ground paprika, and black pepper until fully combined.
- Prep chicken: Place the chicken breasts inside a large 4-6 quart zip-top plastic bag, leaving it open. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness of about ½ to ¾ inch to ensure uniform cooking.
- Marinate chicken: Pour the prepared marinade into the bag over the chicken. Remove most of the air from the bag, seal it closed, and gently massage the marinade into the chicken pieces for 30 to 60 seconds to evenly coat.
- Rest: Refrigerate the bagged chicken for at least 30 minutes, and up to 2 days, allowing the flavors to fully penetrate the meat.
- Cook: When ready to cook, take the chicken out of the refrigerator and let it sit at room temperature for about 20 minutes. Remove chicken from the marinade, discarding the bag and any leftover marinade. Cook the chicken on a grill, in the oven, or on the stovetop skillet, until the internal temperature reaches 165°F (74°C) at the thickest part, ensuring it is fully cooked and safe to eat.
Notes
- If not using a zip-top bag for marinating, place chicken between two pieces of plastic wrap or use a shallow glass or stainless-steel container with a lid.
- Adjust vinegar and honey amounts to balance acidity and sweetness to your taste.
- Recommended cooking methods include grilling for a smoky flavor, baking for hands-off cooking, or stovetop skillet for indoor convenience.
- Ensure chicken reaches an internal temperature of 165°F for food safety.
