  • 2 large eggs

  • 1/2 cup vanilla or plain protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup mini chocolate chips or blueberries (optional)


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. Mix Wet Ingredients: In a large bowl, whisk together Greek yogurt, eggs, honey/maple syrup, applesauce, and vanilla extract until smooth.
  3. Combine Dry Ingredients: In a separate bowl, mix oat flour, protein powder, baking powder, baking soda, salt, and cinnamon. Add to wet ingredients and stir until just combined.
  4. Add Mix-Ins: Fold in chocolate chips or blueberries if desired.
  5. Bake: Divide batter into muffin cups and bake for 15–18 minutes, or until a toothpick comes out clean.
  6. Cool and Serve: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
