Marinade:
- 1½ pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 teaspoons red wine vinegar
- 3 garlic cloves, minced
- 1 tablespoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional:
- Wooden or metal skewers
- Optional: chopped fresh parsley and lemon wedges for serving
Instructions
- Prepare Marinade: In a bowl, mix olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper. Add chicken, coat evenly, and marinate for 30 minutes to 4 hours.
- Prep Skewers: Thread marinated chicken onto skewers. Soak wooden skewers if using.
- Grill Chicken: Preheat grill, oil grates, and grill skewers for 8–10 minutes, turning until cooked through.
- Rest and Serve: Remove from grill, rest briefly, then garnish with parsley and lemon wedges before serving.
Notes
- For more flavor, pair with tzatziki, pita, and Greek salad.
- Can be cooked on a stovetop grill pan as well.
