  • 1 can (15 ounces) black beans, drained and rinsed

Instructions

  1. Cook the sausage: Slice the smoked sausage into thick coins. Heat olive oil in a large skillet over medium heat, then add the sausage. Sear until golden brown and slightly crisp. Remove from the pan and set aside.
  2. Sauté vegetables: In the same skillet, add chopped onion and bell pepper. Sauté for 3-4 minutes until soft and translucent. Add minced garlic and cook for 1 more minute to release its aroma.
  3. Add seasonings: Stir in tomato paste and Cajun seasoning. Cook for 1-2 minutes to deepen and blend the flavors.
  4. Combine ingredients: Return the sausage to the skillet, add the black beans and stir well. Pour in the chicken broth, scraping the browned bits off the bottom of the pan for extra flavor.
  5. Cook the rice: Add the uncooked rice and stir to combine everything evenly. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until the rice is tender and liquid is fully absorbed.
  6. Finish and serve: Remove the skillet from heat, uncover and fluff the rice with a fork. Garnish with chopped green onions and fresh parsley before serving warm.
