Ingredients
Scale
Meat and Oil
- 1 tablespoon olive oil
- 1 pound beef stew meat
Vegetables and Aromatics
- 1 medium onion, chopped
- 3 cloves garlic, minced
Tomato Base
- 2 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
Liquids and Seasonings
- 6 cups beef broth
- 1 teaspoon Italian seasoning
- 1 bay leaf
- Salt and pepper to taste
Grains and Garnish
- 3/4 cup long-grain white rice
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Brown the beef: Heat olive oil in a large pot over medium-high heat. Add beef stew meat and brown it on all sides to develop flavor, then remove and set aside.
- Sauté aromatics: In the same pot, sauté chopped onion until translucent. Add minced garlic and cook for about 1 minute until fragrant.
- Add tomato paste and crushed tomatoes: Stir in tomato paste and cook for 1 to 2 minutes to deepen the flavor. Then add the crushed tomatoes and mix well.
- Simmer with broth and seasonings: Return the browned beef to the pot. Add beef broth, Italian seasoning, and a bay leaf. Let the soup simmer uncovered for 25 to 30 minutes to allow flavors to meld and beef to tenderize.
- Cook rice and thicken soup: Add the long-grain white rice to the pot. Continue simmering for another 15 to 20 minutes until the rice is tender and the soup has thickened.
- Season and garnish: Remove the bay leaf. Season the soup with salt and pepper to taste. Garnish with chopped fresh parsley before serving for a burst of fresh flavor.
Notes
- You can substitute beef broth with vegetable broth for a lighter version.
- For a spicier kick, add red pepper flakes when sautéing the onions.
- If you prefer a thicker soup, let it simmer a bit longer after adding the rice.
- Fresh parsley adds a nice color contrast and freshness but can be omitted.
- Use brown rice if you want a whole grain option, but increase cooking time accordingly.
