Ingredients
Scale
Main Ingredients
- 1 lb lean ground beef
- ½ cup yellow onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2–3 Russet potatoes, peeled and thinly sliced
- 1 can condensed cream of mushroom soup (10.75 oz)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- French fried onions, for topping
Optional Garnishes
- Sliced green onions
- Chopped fresh parsley
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Beef Mixture: In a skillet over medium heat, cook the ground beef along with diced onion, green bell pepper, and minced garlic until the beef is browned and vegetables are softened. Drain any excess fat, then season the mixture with salt and pepper to taste.
- Mix Creamy Sauce: In a separate bowl, combine the condensed cream of mushroom soup with the sour cream until thoroughly mixed to create a creamy sauce.
- Layer Ingredients: Grease a baking dish. Arrange half of the thinly sliced potatoes evenly on the bottom, then spread half of the cooked beef mixture on top. Spoon half of the creamy mushroom sauce over the beef. Repeat the layers with the remaining potatoes, beef mixture, and mushroom sauce.
- Bake Covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 45–50 minutes, allowing the potatoes to soften and flavors to meld.
- Add Toppings and Finish Baking: Remove the foil and evenly sprinkle shredded cheddar cheese and French fried onions over the casserole. Return to the oven and bake uncovered for an additional 10–15 minutes until the cheese is melted, bubbly, and the onions are golden and crispy.
- Garnish and Serve: Optionally garnish with sliced green onions or chopped fresh parsley before serving warm for a delicious, comforting meal.
Notes
- Use thinly sliced potatoes for even cooking and tender texture.
- To reduce sodium, choose a low-sodium cream of mushroom soup.
- French fried onions add a crispy, flavorful topping but can be omitted for a softer topping.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven.
- Feel free to add other veggies like mushrooms or corn for more variety.
