Wet Ingredients

  • 200ml (3/4 cup + 1 tbsp) warm water (tap water, approx. 200g)
  • 1 tbsp warm water (just tap water for yeast activation)
  • 2 tbsp unsalted butter (melted) or vegetable oil


Instructions

  1. Activate the yeast: In a small bowl, dissolve 1 tsp of yeast in 1 tbsp of warm water. Let it sit for about 5 minutes until it becomes frothy, indicating the yeast is active.
  2. Prepare the batter: In a mixing bowl, combine the white flour, salt, sugar, and baking powder. Add the activated yeast mixture plus the remaining 200ml of warm water, and mix well to form a smooth batter. Stir in the melted butter or vegetable oil. Cover the bowl and let the batter rest in a warm place for about 15 minutes to rise slightly and develop air bubbles.
  3. Cook the crumpets: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with butter or oil. Place crumpet rings or metal cookie cutters on the skillet and pour batter inside each ring until half full. Cook for about 8-10 minutes, uncovered, until the top forms holes that do not fill back with liquid and the bottom is golden brown. Remove rings carefully and flip crumpets, cooking for an additional 2 minutes to lightly brown the other side. Serve warm with butter, jam, or your favorite toppings.
